I use seed cheese as a dressing for sprout salads. It tastes SO good! ... that I'm concerned about any health drawbacks to overeating fermented seeds. When I look at the amount of dry seed it takes to make the amount of dressing I like to use on a big salad - it appears pretty excessive! Bottom line: Is it true that through the fermentation process (predigest ion that takes place) - one is OK to eat much, much greater quantities of the dried seed once it has been fermented?
